Cipriana Pruneda was a young Hispanic widow with a young daughter to provide for, who saw the need for a Mexican restaurant in Fredericksburg. So, with an idea in mind, she went to her father and asked if he thought she could run a restaurant. His answer to her was yes, but he reminded her that she would need to be there to run the business. In March of 1968, with the help of family, friends, and the community, Cipriana opened the first Mexican restaurant in Fredericksburg and was the first Hispanic woman to open a business in the area. After nearly 10 years of running the restaurant, she felt the call to go to Mexico as a missionary and told her daughter, Juanita, that she was going to close the restaurant
Juanita had the desire to continue the restaurant and discussed it with her husband, Joe. Together they decided to take over the restaurant and business that her mother built. Before leaving for Mexico, Cipriana stayed for 6 months to teach Juanita and Joe the recipes and how to run the restaurant.
Juanita and Joe, along with their children John, Anissa, and Annora have continued the tradition that Cipriana began. El Gallo has truly been a family-run restaurant for over 56 years. Our food is still home cooked and our recipes remain the same that made El Gallo what it is today —- the best Mexican food around!
